I just slurped down a dozen raw Virginia Oysters for dinner.  They weren't Chincoteague Salt Oysters, unfortunately, but they were still pretty good.

Wifey and I live on the York River, 2 miles from the Virginia Institute of Marine Science. As you cross the Coleman southbound, on your right…is where VIMS raises oysters from spats. For decades we slurped raw oysters like no tomorrow….then during organized grab ass one year, we took in the oyster growing tour…discovered that a single oyster filters 50 gallons of salt water a day.  Think about that…so now, we love them steamed on the grill, or fried….but no more raw….tough for us as Big Island Aquaculture in Hayes has the best oysters to be found!

How does anyone live in WA and NOT eat seafood?

I can't even count how many oysters I've eaten in my life. I prefer raw, but won't turn my nose up at pan-fried, grilled, baked, fried in a sandwich however. Oyster dressing at Thanksgiving and Christmas made with stale sourdough bread. Oyster stew. A good Hangtown Fry for breakfast.

For something different, try raw with kimchi instead of any other condiment. Addictive...

They are very high in zinc.  We used to take oysters outta the sack and put them on the pit . Makes a great snack while bbqing . Just wait til they open and then eat them .

I’ve always wanted to fry oysters in bacon grease. In my opinion oysters should fry at 325 degrees not 360.  Try this if you have not done so already. Old may who died a couple of weeks back at the age of 95 year taught me that 325 was the optimal temperature twenty five years ago. And the lower smoke point of bacon grease would work just right with about 325.

I’ve got a frozen quart of the finest oysters in the world from  Matagorda bay Texas and plenty of bacon grease.

Made my wife an okra, tomato, and onion stew as a side last night.  One of her favorites.  

Those Maine oysters a few posts up look amazing.  I’d like to take a trip along all three coasts just to eat all the oysters.
