"white people" enchiladas.

My wife's been making these for years. It's shredded meat (these are beef, chicken thighs is the most common for us though) mixed with enchilada sauce mixed with cream cheese rolled in flour tortillas.

Not "correct" but delicious.

8670M. It’s fairly easy to harden and temper without a heat treat oven. Probably ends up about 56-58 Rockwell and is not hard to sharpen. I normally make bush craft knives out of it and give them as gifts

If you want to step up your game a little(a lot, actually), keep an eye out on craigslist, offer-up, FBM or whatever for a small pottery kiln. I got mine for $100 iirc and installed a PID controller/thermocouple and solid state relay from ebay. I'm pretty sure I'm into it for under $200.  I've pretty much outgrown mine, but I'll probably keep it around as a dedicated tempering oven once I build a bigger furnace for heat treating bigger knives.

Looking forward to stepping up my game (a lot) with the new oven and the ability to use stainless and other steels. For sure.  Being able to use stainless was a big factor in my getting an oven to begin with as well. I was also trying to keep costs low because I wasn't sure how far I was going to go with knife making.

If you know that you're going to use it enough to justify the cost, it's best to just bite the bullet early. Every time I've upgraded tools for making knives I've always kicked myself for not doing it sooner. Lol

Yep. Should have started with an Ameribrade 2x72. I had no clue how much quicker and precise a really good belt grinder is. Same thing with good ceramic belts
