After living with my wife for 20 years, I dont think there really is a "correct" way to cook most Hispanic food. There are traditional ways, and there are ways that use what is available.
One of the things I respect about the Hispanic culture is the ease with which they roll with what's happening.
Some things are non negotiable. I get that.
The rest are pretty much guidelines from my experience.

I got mine for $100 iirc and installed a PID controller/thermocouple and solid state relay from ebay. I actually just finished looking back through my old build thread. I filled up more than one page with that BS. Lol. I didn't research the project very well before I dove in, but it forced me to learn about it in a way that it stuck with me. The whole problem ended up being that I didn't know that you had to use specific thermocouple wire that's specific to the type of thermocouple that you use. I was just using normal copper wire (with ring terminals crimped on), which are both incorrect. (Every spot where the dissimilar metals touch basically becomes another thermocouple).  I learned enough that I'm planning on building my next HT oven as well.

It's been 10 months since I packed the shop up I've been missing it badly lately.

Looks like a great weather day. 41 and partly sunny. Most of the Friday/Saturday storm is melted from the street already.
Will be out visiting today and have a lunch date with friends. Coffee tonight out in the man cave with my buddy. Proper retireing I must say.
Will have not for sale blue with me.

I started giving knives to my soldiers many years ago as “impact awards”. Also, I’ve always felt that a hand made gift is more meaningful than something from Walmart somI just combined the two. I’ve been giving one to youth I work with in Scouting when the reach Eagle Scout

Thanks. The Scouts certainly seem to think so as none so far have had anything approaching a custom made blade. I’ve been using Florida Rosewood scales made from a tree that a hurricane knocked down a few years ago as I figure it will be a reminder of growing up in Florida. I also put 12 knots in the lanyard to remind them of the Scout Law. Always trying to think of any more symbolism I can build into the blade. Eventually I plan on getting a laser to engrave the scales but haven’t purchased one yet.

That's great stuff!  I agree with you about the handmade gifts. As I've gotten older I've started to notice that gift giving holidays seem to have turned into events where everyone just exchanges gift cards. I've started to try to make more of the gifts I give as a form of rebellion against that.

It was a bit of a learning curve when I built mine, the electronics were pretty straight forward, and yes you must use special wire for the thermocouple.
winding the coils is a bit of a pita, but it lets you control the wattage. My oven gets up to 1000f in like 15 minutes, 2000f in an hour. And is accurate within a degree or 2.
It works great, and I have like $400 in it.

I'm torn between winding coils and just buying coils from evenheat.  Who knows, I could end up finding a deal on a bigger pottery kiln to harvest parts from. Lol

I had a good handle on most of the wiring, it was the thermocouple wire and learning about how the PID works that took my time. I feel like I'm better off now struggling through it though.

Stole this pic from elsewhere. Check out the pivot on this thing! The maker cored out the pivot hole and inlaid the material into the pivot so it aligns with the rest of the scale.
