I was looking at the Clap when I was researching MKM few days ago.  I was kinda diggin it, until I saw the OAL. If it isn't at least 8", it is going to have a hard time finding a place in my rotation. There are some exceptions, but generally, I just can't seem to warm up to anything shorter.

Biscuits are super easy.

2 cups flour, 1 teaspoon salt, 0-1 tablespoon sugar, 1 tablespoon baking powder, 6 tablespoons very cold butter. Mix dry ingredients, cut in butter, add 3/4 cup milk or buttermilk, mix just until combined, dump on counter, scoop it all together and flatten into a rough rectangle by hand. Fold in half, flatten fold, flatten, about six times. Cut rounds, bake at 425 until golden brown.

I keep a couple of sticks of butter in my freezer for making biscuits.  I use a cheese grater to cut it up.

I keep pounds and pounds in mine because I stock up when it goes on a good sale. Very convenient for biscuits. I've done the grater and food processor with frozen, and the pastry cutter with cold but not frozen. The only one I didn't like was the food processor one. Came out tough.

Thanks. It would scale up nicely. I do agree I wish they had that sheepdog FS with micarta. The little one just looks stubby, blade is out proportion to the handle or something.

I actually bought an Appalachian yesterday but then got a message today it wasn't available. I see there is a bunch on ebay too but I might have moved on. I'd like the bearings and micarta. I really don't get why micarta is only on special editions for most makers that even try it.

That's a cool looking knife, I like the milling on the scale and the blade shape is classic.

I've seen a few recipes that leave out the folding, just flatten out once and cut. I may try that next time just to see, but I suspect that won't get the layered effect as much.

I've been waiting for a super slicy shipment from the North but alas, the USPS sucks donkey dicks right now so...

I guess I'll have to use this "slicer grind" Hinderer to get the job done. Is it up to the task?

Some olives and sharp cheddar make it complete.



BTW, Kroger's Private Selection store brand is really top notch. This summer sausage is my favorite as far as store bought goes.

LOL, no, now the Para 3 is clipped at the ends.

I "helped" you decide on a Para 3? That doesn't sound like me...I love blurple though.

I do like this shot because it shows the size of the TRE. sywagon's shots of it are usually stand alone so no point of reference. Much appreciated.

ETA: I swear it said Para 3, looks like it says Para 2 on review. If that is a Para 2, TRE longer than I was envisioning.

Makes more sense I would recommend a Para 2 over a 3 though.
