In my limited experience, those are the best I've tried from the store.

I like that these examples are raw/unpasteurized and naturally fermented without vinegar (just water, veggies, salt, spices) so you actually get the benefit of probiotics.

I like my home made kimchi on bacon and eggs some mornings. Yeah, it sounds weird, but it tastes good!

I'm half Korean so I've been eaten this
shit all my life. Good for your stomach,
Ja-jee and Boji.
This is the brand I get, you can adjust the
heat by adding more korean chili flakes if you wish.

Kimchi on all things. It is a garnish and goes well with everything. My mom (RIP) used to cook ramen and put kimchi and some juice from the jar in the noodles to spice it up.  Mom was an old school Korean and when she couldn’t find authentic kimchi when she came to the US in the early 70’s, she would make kimchi with whatever she could find. I even remember when she made some with dill pickle chips. But, cabbage kimchi for the win...

I love that stuff and I'm about as a traditional meat-n-taters man as you will find. In fact the only Ramen I will buy is Kimchi flavored.

It's fantastic; but to say IT is to think there's only one kind.  

Basic, moderately spicy cabbage kimchi is really fantastic.  It's great for your gut, keto friendly.

I've only tried kimchi once, and it didn't go well.  It was made by the mother of the Vietnamese roommate of a woman I was seeing at the time.  I managed to gag my way past the fumes emanating from the bowl to get a piece in my mouth and instantly regretted it.  Spit it out after about .87 seconds and have no desire to ever try the dish again, no matter how good people claim it to be.  Maybe it wasn't prepared well, I don't know, but it was the worst thing I've ever tasted.

It didn't help that just watching the roommate slobbering at her bowl like a hog at a slop trough turned my stomach.

The Korean restaurant near my place has the best Kimchi I have ever had. It is spicy, sour and aged 4-6 months depending on the supply he has.  Also the best Spicy Pork you could ever have...  Just don't ask for it extra spicy, made that mistake once...

I have gone absolutely nuts over having Kimchi with a good steak, or lamb chops.  There is something about the crunch, pepper heat, and vinegar flavors that makes a good steak so much more wonderful.  I do much for folks who buy cheap steaks or over cook them, but kimchi will still improve things.

Cucumber and radish kimchi is amazing. There are a gazillion different types, so if you don't like it at first, try a different kind.

Eta: the smell will seep out of your pores, and the farts can be horrid (or hilarious depending on the company).

There is a korean-owned burger place near me. Their menu is just basic burgers and fries, with the exception of a bulgogi burger with kimchi. It's really good.

Throw some in the bottom of your ramen bowl before adding the ramen and broth.  The hot broth warms it and takes the edge off the probiotics while leaving the kimchi mostly uncooked.

Fried in a bit of butter and then add eggs to scramble.  Or white rice, kimchi, fried egg, and green onion on top. Add some siracha as garnish. Kimchi garnish plus juice in a bloody mary. Works for sauerkraut too. (kraut juice is great in a bloody) On triscuits with brie cheese. Any place you might otherwise put a pickle, put kimchi.

Eat on Japanese style sticky white rice.

Good in fried rice.

Great side dish for any Asian food. But why discriminate? Its a good side with steak and potatoes too.

I LOVE kimchee burgers. Bun, mayo, hamburger patty, and cold kimchee. Nothing more and its sensational.
(My coworker grills his kimchee for his burgers, to each their own.)
