My dad spilled some kim chi juice on the carpet of a condo in Hawaii... I'm pretty sure it burned through that carpet like acid..

I like that these examples are raw/unpasteurized and naturally fermented without vinegar (just water, veggies, salt, spices) so you actually get the benefit of probiotics. |

It's good but in small quantities. You'll need something bland (rice) to go with it. And beer.

Kimchi on all things. It is a garnish and goes well with everything. My mom (RIP) used to cook ramen and put kimchi and some juice from the jar in the noodles to spice it up. Mom was an old school Korean and when she couldn’t find authentic kimchi when she came to the US in the early 70’s, she would make kimchi with whatever she could find. I even remember when she made some with dill pickle chips. But, cabbage kimchi for the win...

Basic, moderately spicy cabbage kimchi is really fantastic. It's great for your gut, keto friendly. |

Like most foods, kimchi runs the gamut from amazing to downright disgusting. I love a good spicy kimchi and will eat a jars worth in one sitting.

I've only tried kimchi once, and it didn't go well. It was made by the mother of the Vietnamese roommate of a woman I was seeing at the time. I managed to gag my way past the fumes emanating from the bowl to get a piece in my mouth and instantly regretted it. Spit it out after about .87 seconds and have no desire to ever try the dish again, no matter how good people claim it to be. Maybe it wasn't prepared well, I don't know, but it was the worst thing I've ever tasted.
It didn't help that just watching the roommate slobbering at her bowl like a hog at a slop trough turned my stomach. |

The Korean restaurant near my place has the best Kimchi I have ever had. It is spicy, sour and aged 4-6 months depending on the supply he has. Also the best Spicy Pork you could ever have... Just don't ask for it extra spicy, made that mistake once...

I have gone absolutely nuts over having Kimchi with a good steak, or lamb chops. There is something about the crunch, pepper heat, and vinegar flavors that makes a good steak so much more wonderful. I do much for folks who buy cheap steaks or over cook them, but kimchi will still improve things.

Cucumber and radish kimchi is amazing. There are a gazillion different types, so if you don't like it at first, try a different kind.
Eta: the smell will seep out of your pores, and the farts can be horrid (or hilarious depending on the company). |

There is a korean-owned burger place near me. Their menu is just basic burgers and fries, with the exception of a bulgogi burger with kimchi. It's really good.

Friggin LOVE it! When I was in the Army I had an Sgt. who had returned from Korea and challenged me to go to lunch with him. I was hooked.
