Cayenne powder actually mellows out and gives a really good flavor once the meat has been dehydrated, but I was out of it this time. I was also out of Liquid Smoke so this batch didn't have any in it. You have to be really careful with it though because too much of it will overpower the other flavors. Eta For tasting the mix, it's kind of tricky as the flavor will change some and concentrate more when dehydrated but if it tastes a bit off I know I need to balance it out to get the proportions right. If I can't taste one of the spices (except pepper) I add a little more until I can barely discern it in the mix. |

This made for really chewy jerky. I asked him once why he did not go against the grain, and he replied that this way made it much chewier which meant that his grandkids couldn't eat all of his stash as fast. Well, he wasn't wrong. |

You can use an oven to make jerky well enough too. My oven has a dehydrate mode setting so it's super easy. Comes out the same as purpose built dehydrator. Just be sure to keep the door cracked open to let out moisture.

The round ones in my photo are eye of round. They turned out amazing. The perfect low fat jerky.
I used precut carne asada beef for the strips and I like how they turned out. I kinda want to do a whole flank steak as one piece to see how it turns out. |
