I usually just wing it and taste it as I mix but it goes something like this for two pounds of meat (I only use London broil):

5 - 6 oz. worchestershire sauce (L&P only)
4 - 6 oz. soy sauce
2 - 4 oz. teriyaki sauce
1.5 - 2 t. salt
1 - 1.5 t. pepper
1 - 1.5 T. onion powder
1 - 2 t. garlic powder
1 - 1.5 t. chili powder (Mexene)
1 - 1.5 T. ketchup
0.5 - 1.0 t. Liquid Smoke

I don't actually measure but instead start at the low end and add to taste after whisking.

For the flavors, I sprinkle on white pepper, black pepper, chili powder, or cayenne powder after drying the meat off and just before placing in the dehydrator.

Cayenne powder actually mellows out and gives a really good flavor once the meat has been dehydrated, but I was out of it this time.

I was also out of Liquid Smoke so this batch didn't have any in it. You have to be really careful with it though because too much of it will overpower the other flavors.

Eta

For tasting the mix, it's kind of tricky as the flavor will change some and concentrate more when dehydrated but if it tastes a bit off I know I need to balance it out to get the proportions right.

If I can't taste one of the spices (except pepper) I add a little more until I can barely discern it in the mix.

As per your advice Whiskers I kept the dehydrator in my cart and it's $30 off today so I got one ordered. If anyone has been waiting might go check.

An ex-GF of mine's dad would take big roast cuts off the hind quarters of deer and cut them with the grain on his big deli meat slicer.  This made for really chewy jerky.  I asked him once why he did not go against the grain, and he replied that this way made it much chewier which meant that his grandkids couldn't eat all of his stash as fast.  Well, he wasn't wrong.

Cut jerky into squares. And you can enjoy it both ways every time!

You can use an oven to make jerky well enough too. My oven has a dehydrate mode setting so it's super easy. Comes out the same as purpose built dehydrator.  Just be sure to keep the door cracked open to let out moisture.

The round ones in my photo are eye of round. They turned out amazing. The perfect low fat jerky.

I used precut carne asada beef for the strips and I like how they turned out.

I kinda want to do a whole flank steak as one piece to see how it turns out.

I saw this little retard on the package, saw it was made in Alabama and had over 50% of your sodium intake in one tablespoon, so that's all I needed to know.
