Steak: Rare or Medium Rare depending on cut.
Chicken: cooked.. temp depends on time, chicken part, and whatnot so.. 155-175
Pork: Medium Rare...BUT.. I eat raw pork too.

There are specialty chicken restaurants in Japan that make raw chicken sashimi and sushi, but their standards for raising chickens are far more stringent than here.

Anybody eat medium rare duck breast? Common in many places here.

Dried out over cooked meat sucks.  I’ll take my steaks rare, my duck rare, and chicken/pork just barely cooked through.

Exceptions being soups and stews.

BBQ is low and slow, cooked to a higher internal temp than most stuff.

Exactly this. The 165 degree number is given because people are too stupid to understand holding at 145 for 10 minutes, or the value for 155.  It's entirely dependent on the consistency that you prefer to have your chicken at when you eat it.

I like everything well done and don't care what anyone else has to say or think about it. It should look cooked all the way through it can be done without drying it out. Beef, pork, chicken or fish. Put a nice sear ,well done and not burn or dry it, if ya can't do that maybe you shouldn't be on the grill. Shushi? Better run that shit through the deep fryer before you trot it out to my table. A guy I know ate all his food raw for a while. All of it. Eggs, white meat, red meat, fish. He didn't refrigerate the eggs either. It was odd. He's alive and healthy, but I don't know if he still does this.

But yea, all red meat should be eaten rare.

If you get farm fresh eggs and don't wash the outer covering off of them, they are good to go right on the counter.

Washed and refrigerated eggs is kind of a US only thing.

There’s a lot of really good and scientific reasons why chicken needs to be cooked more than steak. If you want food poisoning though, go ahead and and grill your chicken rare.

That said, a lot of people do cook chicken until it’s unnecessarily well done. It doesn’t need to be boot leather to be safe to eat and a good meat thermometer can go a long way.
